Chocolate Buttercream Frosting Mix (Makes nearly 2 1/2 lbs)

This frosting is made with the professional buttercream frosting base that many bakeries use.  We buy the base in bulk and add premium cocoa and powdered sugar.  You add butter and shortening and water and mix with your electric or stand-type mixer.  You'll make great, fudgy frosting.  Editor's note:  This is a two-stage mix.  First you add the water and whip then you beat in the fat.  Since, the base used in this frosting mix is made with egg whites, it will not foam properly with fat.  Be sure to beat with water only before adding the butter and shortening.  This mix is made with premium, dark cocoa. Each mix makes nearly 2 1/2 pounds of frosting.
