Forschner name was first carved in steel in 1855 and has become very popular in restaurants and commercial use. The high carbon no stain stainless steel blades hardened to a Rockwell Hardness of 54-58 and are hand finish by Victorinox in Switzerland by skilled craftsman using a special tempering process to produce an edge that can be resharpened over and over again. The blades will not discolor or corrode. Classic rosewood handles are ergonomically designed to minimize wrist tension. 4 3/4" Plain Blade.
