Forschner name was first carved in steel in 1855 and has become very popular in restaurants and commercial use. The high carbon no stain stainless steel blades hardened to a Rockwell Hardness of 54-58 and are hand finish by Victorinox in Switzerland by skilled craftsman using a special tempering process to produce an edge that can be resharpened over and over again. The blades will not discolor or corrode. Fibrox handles have a ergonomic design and a gritty finish which allows increased safety when the handles are wet or greasy.
