Designed especially for vegetarians! Bright orange lentils and cracked wheat (also called bulgur wheat), along with the seasoning packet, makes this a pretty-as-a-sunset golden stew. Additions of chopped onion, broth, orange juice and optional butternut squash appeal not only to vegetarians but also to anyone who loves a healthful, delicious and unique meal!
You will also need: 2 T. butter 1 large, sweet, red, or yellow, onion chopped 10 cups chicken or vegetable broth 1 cup orange juice 1 bunch fresh green onions, sliced Wedges of fresh orange for garnish (Vegetarian add in: 1 butternut squash.) Prep time: Approx. one hour from start to finish. Cooking directions as well as vegetarian cooking option on inside of label.
Cooking directions: In a 4-quart soup pot saute onion in butter. Stir in contents of seasoning packet. Add broth and lentil/cracked wheat grains to pot, bring to a boil. Simmer, covered, for 20 minutes. Add orange juice, simmer 10 minutes more. Sprinkle in green onions and serve this pretty-as-a-sunset whole grain soup. Vegetarian cooking option: For a beautiful vegetarian addition peel and cut into cubes one large butternut squash adding it with the lentils and cracked wheat.
